So which is the most elite of the elite "chapters"?
The Grey Knights are definitely one of the best, but there really isn't a most elite. They tend to specialize in certain types of warfare, or in fighting certain enemies, but all of them are about equally effective.

Nothing about this mentions hiding the existence of Daemons; I don't think the Imperium had had much contact with them until near the end of the Great Crusade. If nothing else, it was better than the Lectitio Divinitatus that replaced it, because the whole point was to destroy religion and replace superstition with science.

Have you read any of the Horus Heresy books? It's explained in detail.

IIRC, Galaxy In Flames has the greatest "priest" of the Imperial Truth, Kyril Sindermann, fall quickly away from it when confronted by a book of daemonic summoning rites that he uses to accidentally bring one into existence.

Since each chapter is more or elss self contained and self sustaining thier best indidvuals tend to stay with thier chapter their entire lives and msot chapters tend to have one or two Elite companies (typically the 1st company who get even better armour in the shape of the tactical dreadnought suits).
The only real exception to this is the Deathwatch which IIRC recuits the odd marine here and there from odd chapters for special duties.
As to what Ultramariens are afrid of its quite simple: Actually doing any work and getting thier armour dirty
