Actually, they couldn't. Canonically, earth ponies possess passive magical abilities that allow them to grow and care for plants. Unicorns could duplicate this (after all, Twily duplicated the pegasi ability to walk on clouds), but they couldn't do it in mass quantities. In short, earth ponies are really the only ones who can produce food.
