Is "In Mellivora capensis nos fides" the correct Latin translation for "In Honey Badgers we trust"? If not, could someone provide me with a more accurate translation?

I don't know what your original actually means but I'll give it a try.
"In hyracibus mellis fidimus"
"Hyrax" means "rock badger" but that shouldn't matter too much.
You can add "nos" if you wish to stress that it's specifically you who trust in honey badgers.

That's the scientific name though. Nobody would know what your talking about. "Mellivora" will do. Just leave out "Mellis" because it isn't making it simpler.

This is a bit sloppy; you don't usually sign an oath in Latin. You speak it. (Also, the repetition of 'glory be' really annoys me, since at least half the point of that phrase in English is the way it rolls off the tongue, which "gloria sit" really doesn't do. I almost want to make it an accusative of exclamation instead: Gloriam!)

You could of course play around with word order, too...now that I think of it, I think In machina veritas sounds better

I'm not sure if it's strictly necessary to say "debemus facere" (we ought to do) instead of just "debemus" (we ought).

The first part could also be Facemus quae debemus, depending on whether there's one thing that we must do or multiple things we must do.

Change the order as you see fit, just keep "inter" before "tempestatem".

Edit: looking at your current motto, if calm should be an imperative verb instead of a noun you should use "compone(te)". The "-te" should be added when addressing multiple people. If it's something else just let us know.

My new region has a tricky one. It's supposed to be, roughly, "As Above, As (or So) Below! Light From The Books Of God And From The Books Of Science (or Knowledge)!" I already have a Latin translation, but it's just the smaller phrases tacked together, so I doubt I have the grammar right.

"Ut Supra, Ut Infra! Lux Ex Libris Deo Et Ex Libris Scientia!"
This means "As Above, As Below! Light From Books For/With God and From Books With Science!" or even "... Light And Science From Books Of God From Books Of Science!" It should be:
"Ut Supra, Ut Infra! Lux Ex Libris Dei Librisque Scientiae!" or a little shorter "... Lux Ex Libris Dei Scientiaque!"

You can change the word order of the second sentence as you see fit. A special order would be "...Dei Libris Librisque Scientiae" and that both reversed and with the words of each half switched around which would indicate an opposition between the books of science and those of God. You can double the "Ex" if you wish and of course you can also use "Et" or "Atque" in stead of "-que". though you must position them before the word instead of attaching them.
