4. Dice a tomato, slice an avocado and chop some dhives. Have sliced olives ready.
5. Top with sour cream, black olives, canned or fresh chiles, sliced avocados or chives.

Hammam fereek (Sartirius)

Description: Stuffed pigeons. Tasty.

-4 pigeons with giblets.
-160ml butter
-10 spring onions/scallions, chopped
-Salt to taste
-Freshly milled black pepper
-125ml rice
-15ml mint, chopped
-15ml green onion, chopped
-15ml cumin seeds, ground
-4 scotch bonnet peppers, diced

1.) Chop giblets. Melt 80ml butter in a medium pan. Cook over medium heat, chopped giblets, chilies, green onions, salt and pepper. Stir occasionally until giblets are browned. Stir in rice and mint.

2.) Rub the cavity of each bird with salt, pepper and cumin seeds. Stuff each bird with 30-50ml giblet mixture. Pull loose skin over cavity - secure with wooden or metal picks. Place birds on grill.

3.) Take remaining butter and brush over stuffed birds. Grill over hot coals until birds are crispy on the outside.
