Where can I go to create custom football (soccer) uniforms?

There are some manufacturers in this forum who can make them for you. Polar Islandstates has one, the only one left it seems. If he comes back onto NS, Red Blackiland has a good one as well.

Why won't xkoranate let me go past the first day of events?

Are you sure you selected round-robin instead of individual matches? If you leave xkoranate on the default mode, it will only scorinate a day of matches (1v2, 3v4 and so on though home and away are reversed for baseball if you turn on linescores). For most Olympic events, it scores just a single run (with a mass start) unless you set it up for multiple runs and some of the events require the tables to be done manually (for example: decathlon and the biathlon pursuit).

NS Sports would most likely be the best sub-forum to post it in. We've had MMA and combat sports tournaments before and xkoranate supports a number of sports that would be considered martial arts (all of the ones included in the Summer Olympics, plus several others).

Have you ever played lacrosse? Huge difference playing against teenagers than playing against fully grown adults.

It's like playing any contact sport in general. If you play against fully grown adults, you're going to get hurt easier if you're 17.

Who cares? People host tournaments outside of the governing body all of the time, regardless if the main thread gets interest or not.
