The nation in Brazil is dubbed, at least by us, 'the Empire of Nova Byzantium' or 'the Empire of Nova Roma'. Basically, during the Forth Crusade - which ended both the Ottomans and Byzantines - the Byzantine Emperor, along with his most trusted kinsmen and countrymen, escaped from their burning city in the thick black night during the Final Siege of Constantinople. Their ships head east, and landed in the New World. (Year not figured out yet. 1420 perhaps?). They quickly abandoned their old faith in favour of the ancient Greek beliefs, mixed with the native ones of the region. It's now an Feudal (probably) Monarchy where the Emperor and clergy are seen as gods in and of themselves, with a Greek upper-class and native/immigrant populous. They still have the secret of Greek Fire.
The nation in Quebec is an ex-Burgundian colony. Never got around to a name, but it would be a mix of Dutch and French in naming style. It has a few big cities in place of Quebec, Montreal and Halifax, with a decently large population. Not much else except that it won a war of independence against the Burgundians. Most of it's history is up to the player.
