@Allanea:
Drones would require electronics techs, electricians, and mechanics for maintenance, probably roughly equivalent to doctors and chefs. Granted, you don't need combat pay, but a number of reports indicate that psychologists will still be needed. (All of these reference a 2011 report by USAF psychologists, but I have been unable to locate the original document online.)

A human aircraft requires electronics techs, electricians, and mechanics too.

You need more of them for a human piloted aircraft or anything.

To suggest that drones are more expensive than human anything is a bit silly. It flies in the face of historical cost trends of automation.

I agree. That's what I was trying to say initially, that human infantrymen are cheaper than combat drones designed to replace infantrymen.

They aren't.

A human soldier requires all the support a drone does, and more.

Any robotic infantryman would be autonomous or close to it, otherwise it wouldn't be an effective replacement for an infantryman, so that would cut out the pilot analogy. It would require support, yes, but a human soldier similarly equipped to a robot would require more regardless.

Manned aircraft pilots are officers as well.

No they don't. They would be treated as disposable pieces of equipment. That's their entire purpose. You don't need maintenance personnel for something you plan to just toss when broken. By the time you're colonizing other planets, you can almost certainly automate their combat routines so you wouldn't even have drone pilots.

It doesn't take a whole lot of training to lay a minefield by hand right? I'm wondering if I could use my normal infantry forces to supplement my sappers and engineers in the construction of minefields to speed up the process

It depends on the mine feild. AT mines and fancy things with stick and/or tilt fuses are probably best left to engineers as they will have the mechanised equipment to lay stuff quickly and the skill and experience with the more exotic and dangerous types. More basic stuff should be able to be handled by the PBI and they should have had some exposure to it in basic anyway.

Literally first thing we practiced to do when we stopped to build a camp. "Here are our positions. That road is most propable vector of for enemy. Create *minefield in this intersection."

*I am not sure how to translate "varamiinoite". backup minefield? The kind of temporary minefield created by the infantry till engineers can arrive to create proper minefield, assuming the time allows it.

Sounds along the lines of what I was thinking

I need to construct 800 or so miles of defenses along my coastlines (the vast majority of which will be unoccupied/ will only be comprised of obstacles) so I'm probably going to need as much manpower as possible, especially if the defenses are to be constructed in roughly two weeks time

You can do it off the back of a truck in a hurry (or via aircraft or artillery if really in a hurry). Otherwise, if pressed and for some reason without trained engineers, "one every X paces" would probably suffice for a semi-competent minefield. Just make sure they stay in an actual line.

I am not sure if it's sad or amusing that these days, in full combat gear I am heavy enough to reliably set of the blasting cap used in Finnish anti-track mines.

Trucks and aircraft are a good way of seeding larges areas quickly if you aren't concerned about burying everything.
Truck wise you can do all sorts of things ranging from just having a bunch of guys on the back of a flat bed chucking mines to the sides and rear as you drive to systems that will fire patterns from a stack of sideways pointing tubes.

I was thinking of having the soldiers work under the directions of actually trained engineers and pioneers to avoid any mishaps-

I'm going to be using a mix of bounding mines and all other sorts of nastiness so I'd rather my troops not blow themselves to pieces lol
