You've clearly never had to carry gear around in the bush for extended periods of time. Back when I was backpacking regularly, you could always tell the difference between the new guys and the veterans, because one group cut weight everywhere they possibly could, and the other was like "eh, this extra gadget/food item/thingy that I don't really need only weighs like a pound, it'll be fine. And this one. Oh, and this one too!"
And that's civvies fucking around innawoods where it's safe and you don't need to run. Soldiers will and should shed weight whenever they possibly can.
Perhaps being part of a civilized army which doesn't need its soldiers to carry around stupid amounts of gear by having these things called "armored personnel carriers", "Infantry fighting vehicles", "infantry mobility vehicles", "mine resistant ambush protected vehicles" and "cargo trucks" where they can leave stuff would alleviate this issue?
Although in all seriousness, carrying a few more mags seems pretty pointless, it'd be much more beneficial to carry more ammunition belts for the sections MG operator (whatever hes called in your force) or RPGs for the section grenadier

If that doesn't teach you the value of weight, even without having to go on a long trek (which happens, vehicles break, can't traverse certain terrain, aren't overly stealthy and tend to be giant targets), I don't know what will.
I'm using mags because they're a good measuring stick. Obv it's situation dependent, and MG ammo, grenades, etc. will often be more useful than an extra mag or a couple stripper clips, but they'll also be vastly more useful than a big knife. There's only one reason to carry a kukri/machete/bigdumbknife ever, and that's if you're operating in deep jungle. Outside of an environment where you need to chop through vines and brush just to get from point A to point B, it's just dead weight.

Being incredibly scrawny and having to carry fairly heavy loads long distances as part of my (seasonal) employment, I fully appreciate weight and the differences even minor increases and decreases can have

Not even close. You want as much ammo as you can take. Cram as much of it into as many places as possible.

A friend of mine requested that I do a gear config chart for his nation's infantry, and I'm pretty pleased with what I've got so far (WIP!). He also requested that it be in Rhodesian Brushstroke, which was a bit difficult for find a high-quality pattern image for, but I think the end result payed off.
Working on his infantry has also given me more confidence to draw more of my own gear and apply it to the templates, as he has very spefiec gear requests for his line-art. The FLYYE Armor Chassis with shoulder-pads and crotch-pad, Bijan knee-pads and elbow pads, battle-belt, helmet and goggles, helmet visor, and throat-mic are all made to order, so to speak. It's been tiring to look up and duplicate all these specific pieces of gear, but it's definitely becoming a learning course in the process.
