Allot of tank systems tend to have analog back-ups.

Painting them with the markings of other (or non-existent) formations

It is controlled directly by the driver, who wears a helmet reading his brain, connected to the tank's artificial intelligence. Although impressive, its use is very limited, and only a handful of units exist and are properly maintained.

I wonder just how reliable were the cam-and-shaft computers on those? They sound like they'd be a pain to fix.

I'm not sure that the technical guts would be the main issue, as long as you had a crew that could take basic care of them. Besides, it's not like you'd need your advanced FCS and battle management systems to hoof it across the post-apocalypse. The real issue would be fuel.
What you really need is a modern MBT hull refitted with electric motors and batteries with solar panels all across the top of the turret and rear deck. Boom, fully self-sustaining scorching desert post-apocalypse invincible doom wagon. Just weld lines of big metal spikes to either side of the cannon barrel and use the turret traverse to scythe down your enemies.
