To my understanding, with regards to aircraft, fourteen craft on one trip would constitute one sortie.

Both T-72 and T-80 are direct descendants of the T-64 and share its hull design. The only serious difference, other than armor scheme, is the suspension.

I'm starting to build up an assortment of vehicles for a storefront and the question came to mind. Can I make a bunch of interchangeable barrels/turrets/ sets to go on my MBT chassis?

Yes. As long as you get the works. anti-air gun, anti-air missile, radar, thermal tracker when you're being threatened by HARM, howitzer, tank destroyer, mortar, an of course tank.

That is very true. However, some nations don't RP as being lolhueg with disproportionately large militaries and disproportionately advanced equipment, and they like to be somewhat reasonable. (Myself included, even if I come up with lolridikulus concepts now and then.)

Pretty much this. Whether a Nazi nation, evil nation, or good nation most people prefer the idea of some sort of well equipped elite military force. You can find guys who use second rate equipment but it is less common because most people like their fantasy nation to have a "elite" military with the best training and equipment.

That's kind of the reason I used to have two, but I never RP, so I didn't use it. The main one would've been the ideal one, and the other one the poor and backward one. Thought RPing as a poor & backward one would be more interesting. But, like I said, I typically don't RP, I just wanted to put something into the factbook.
