A specialty is unlocked when you reach a certain level in the Challenges "game". Choosing a category as a specialty will make it more likely to be chosen in the challenge, so it's a good idea to choose a category in which you are high ranking.
Champion Points measure how much you;ve gained by being victorious over others, and they also measure to your next level, which is reached after a specific number of Championship points are gained.
