If I choose a national religion, and then for some reason decide to secularize, may I remove the "Santiago II's national religion is ____"?

You'd have to wait for that issue to reappear (which I'm not sure it does) after you select it.

No, but you could say "Santiago II's national religion is none".

Once activated, the special custom fields cannot be deactivated. You don't get the special issues anymore. You just have to change the text, as suggested by Pestokhoriraes.

For phrasing purposes, you might want to put in something like 'non-existent' so that it reads cleanly (ie: "Santiago II's/it's national religion is non-existent."), or make a joke out of it in some similar fashion (ie: "'s religion is DEMOCRACY" or "'s religion is a firm belief that people are basically okay.", or really anything that fits in the entry box that makes a sentence instead of a proper noun. Speaking from experience, this can have amusing results in issues every time you have to hear from, say, a bishop of a government service...)

I use "left unchosen", though, I might make a switch to "state atheism".

I'd like it if we could select whether we want to use the national religion/leader/capital city custom fields, in the same way we can select whether the motto is a quote from Leader. I don't think that'll happen, however, considering it's been this way since they've been introduced.
